Laifenzai

Laifen is a popular snack in Shenzhen. Dapeng Laifenzai is listed as a district-level intangible cultural heritage. It is said that Dapeng Laifenzai is originated from Ming Dynasty. Most of the warriors in Dapeng Fortress were from Southern China and they loved to eat rice noodle. However, the conditions in barrack were humble, people therefore invented a simple way to make rice noodle like food. After soaking the rice, the rice is grated into powder and then mixed with water. Put the rice water into a coconut shell, with a 2cm diameter hole in the center of the coconut shell. Shake the coconut shell. The rice water will drain out of the hole to the boiling water. When it is cooked, seasoned with oil and salt then it is ready to eat. The locals call this action to shake coconut shells is“濑”. The rice flour made by this method is “濑粉仔.”
